Gluten free Macadamia Nut Friands

INGREDIENTS (makes 6)
3 egg whites, beaten lightly
80g butter, melted
1 cup almond meal
¾ cup gluten free icing sugar
¼ cup gluten free plain flour
½ cup plain macadamia nuts (or other nuts/dried fruit)
Extra icing sugar

METHOD
·       Preheat oven to 180°C fan-forced. Grease or line six 1/3-cup capacity oval friand pans.

·       Place egg whites in a medium bowl, whisk with a fork until combined.

·       Add butter, almond meal and sifted icing sugar and flour; stir until just combined.

·       Gently stir in macadamia nuts.

·       Divide mixture among prepared pans; bake about 20-25 minutes.

·       Stand 5 minutes; turn onto wire rack to cool.

TIPS
·          Dust with icing sugar to serve
·          Best kept refrigerated
·          Nice when warmed before serving
·          Try dried other nuts, cranberries, sultanas or cherries instead of macadamia nuts
